Ingredients
  

Chicken Marinade
  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 2 teaspoons chipotle powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup sour cream

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chipotle powder, cumin, garlic powder, salt, and black pepper. Mix well.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Grill the Chicken
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and charred.
  3. Let the chicken rest for 5 minutes before slicing it into strips.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Fill each tortilla with grilled chicken, then top with shredded lettuce, diced tomatoes, avocado slices, cilantro, and a dollop of sour cream.
  3. Serve immediately and enjoy!
