Marinate the Chicken
- In a mixing bowl, combine olive oil, lime juice, chipotle powder, cumin, garlic powder, salt, and black pepper. Mix well.
- Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Grill the Chicken
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and charred.
- Let the chicken rest for 5 minutes before slicing it into strips.
Assemble the Tacos
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Fill each tortilla with grilled chicken, then top with shredded lettuce, diced tomatoes, avocado slices, cilantro, and a dollop of sour cream.
