Ingredients
  

Dough
  • 2 cups all-purpose flour plus more for dusting
  • 1 packet instant yeast
  • 1 cup milk warm
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1/2 teaspoon salt
Filling
  • 1 cup grated carrots
  • 1/2 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped walnuts optional
  • 1/4 cup raisins optional
Frosting
  • 4 ounces cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes until frothy.
  2. Add melted butter, egg, and salt to the yeast mixture. Gradually add flour and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.
Make the Filling
  1. In a bowl, mix grated carrots, brown sugar, cinnamon, walnuts, and raisins until well combined.
Assemble the Rolls
  1. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface into a rectangle.
  2. Spread the filling evenly over the dough, then roll it up tightly from the long side.
  3. Cut the rolled dough into 1-inch pieces and place them on a greased baking sheet.
  4. Cover and let rise for another 30 minutes.
Bake the Rolls
  1. Bake in the preheated oven for 20-25 minutes until golden brown.
  2. While baking, prepare the frosting by mixing cream cheese, butter, powdered sugar, and vanilla until smooth.
Serve
  1. Remove the rolls from the oven and let cool slightly. Spread the cream cheese frosting on top before serving.
