Method
Prepare the Chicken

- Using a meat mallet, pound the chicken breasts to an even thickness.
Make the Filling
- In a bowl, combine the mozzarella, diced tomatoes, and chopped basil.
Stuff the Chicken
- Season the chicken breasts with salt and pepper.
- Place a portion of the filling in the center of each chicken breast and fold over to enclose the filling.
Cook the Chicken
- In a skillet, heat olive oil over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
