Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Stuffing
  • 8 oz fresh mozzarella cheese sliced
  • 2 medium tomatoes diced
  • 1/4 cup fresh basil leaves chopped
  • 2 tbsp balsamic glaze for drizzling
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Olive Oil
  • 2 tbsp olive oil

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Using a meat mallet, pound the chicken breasts to an even thickness.
Make the Filling
  1. In a bowl, combine the mozzarella, diced tomatoes, and chopped basil.
Stuff the Chicken
  1. Season the chicken breasts with salt and pepper.
  2. Place a portion of the filling in the center of each chicken breast and fold over to enclose the filling.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  2. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
Serve
  1. Drizzle with balsamic glaze before serving.
