Ingredients
  

Chicken and Marinade
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil for marinade
  • 1 tablespoon Cajun seasoning adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Sweet Potatoes
  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup zucchini sliced
  • 1 cup red onion sliced
Toppings
  • 1 avocado sliced for serving
  • 1/4 cup fresh cilantro chopped
  • 1 lime juiced for serving

Method
 

Prepare Sweet Potatoes
  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
Cook Chicken
  1. In a bowl, combine chicken, olive oil, Cajun seasoning, garlic powder, and onion powder. Mix well to coat.
  2. Heat a skillet over medium-high heat and add the marinated chicken.
  3. Cook for 6-8 minutes until the chicken is cooked through and no longer pink, stirring occasionally.
Sauté Vegetables
  1. In the same skillet, add the sliced bell pepper, zucchini, and red onion.
  2. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
Assemble Bowls
  1. In bowls, layer roasted sweet potatoes, sautéed vegetables, and Cajun chicken.
  2. Top with sliced avocado, fresh cilantro, and a squeeze of lime juice.
