Ingredients
  

Buffalo Chicken
  • 1 lb chicken breasts boneless, skinless
  • 1 cup buffalo sauce store-bought or homemade
  • 1 tbsp olive oil
Rice Base
  • 2 cups brown rice uncooked
  • 4 cups water
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or blue cheese
  • 1/2 cup sour cream for serving
  • 1/4 cup green onions sliced

Method
 

Prepare the Chicken
  1. Place the chicken breasts in a slow cooker and drizzle with olive oil. Pour buffalo sauce over the chicken.
  2. Cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and tender.
Cook the Rice
  1. In a rice cooker, combine brown rice and water. Cook according to rice cooker instructions.
Assemble the Bowls
  1. Once the chicken is cooked, shred it using two forks and mix it with the buffalo sauce in the slow cooker.
  2. In serving bowls, layer cooked rice, shredded buffalo chicken, and top with lettuce, tomatoes, cheese, sour cream, and green onions.

Notes

Feel free to adjust the spice level by using more or less buffalo sauce. You can also add other toppings like avocado or jalapeños.
