Prepare the Chicken
- Place the chicken breasts in a slow cooker and drizzle with olive oil. Pour buffalo sauce over the chicken.
- Cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked through and tender.
Cook the Rice
- In a rice cooker, combine brown rice and water. Cook according to rice cooker instructions.
Assemble the Bowls
- Once the chicken is cooked, shred it using two forks and mix it with the buffalo sauce in the slow cooker.
- In serving bowls, layer cooked rice, shredded buffalo chicken, and top with lettuce, tomatoes, cheese, sour cream, and green onions.
