Ingredients
  

Pasta and Vegetables
  • 8 oz pasta preferably fusilli or penne
  • 2 cups cherry tomatoes halved
  • 1 cup fresh basil chopped
  • 1 cup mozzarella balls bocconcini, halved
  • 1 medium red onion finely chopped
Dressing
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 clove garlic minced
  • 1 teaspoon honey optional

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and rinse under cold water to stop the cooking process.
Prepare Dressing
  1. In a mixing bowl, whisk together balsamic vinegar, olive oil, minced garlic, honey, salt, and black pepper until well combined.
Combine Salad
  1. In a large bowl, combine the cooked pasta, cherry tomatoes, basil, mozzarella, and red onion.
  2. Pour the dressing over the salad and toss gently to combine.
  3. Taste and adjust seasoning if necessary.
Serve
  1. Serve immediately or chill in the refrigerator for 30 minutes to enhance flavors.
