Filling
  • 1/2 cup brown sugar packed
  • 1 tablespoon cinnamon
Glaze
  • 1 cup powdered sugar

Method
 

Prepare the Cookie Dough
  1. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Make the Filling
  1. In a small bowl, combine the brown sugar and cinnamon for the filling.
Assemble the Cookies
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll out the cookie dough on a floured surface to about 1/4 inch thick.
  3. Use a cookie cutter to cut out shapes and place half on the baking sheet.
  4. Spoon a small amount of the filling onto each cookie shape on the baking sheet.
  5. Top with another cookie shape and seal the edges with a fork.
