Ingredients
  

Pasta and Chicken
  • 1 cup orzo uncooked
  • 2 cups chicken breast diced
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Creamy Sauce
  • 8 ounces Boursin cheese garlic and herb flavor
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream for richness
  • 1 cup spinach fresh, chopped

Method
 

Cook the Orzo
  1. In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Cook the Chicken
  1. In a skillet, heat the olive oil over medium heat. Add the diced chicken, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes.
Prepare the Sauce
  1. In the same skillet, add the chicken broth and bring to a simmer. Stir in the Boursin cheese until melted and creamy. Add the heavy cream and spinach, cooking until the spinach wilts.
Combine and Serve
  1. Add the cooked orzo to the skillet and stir to combine. Cook for an additional 2-3 minutes to heat through. Serve warm.
