  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons bourbon
Add-ins
  • 1 cup chocolate chunks semi-sweet
  • 1/2 cup cooked bacon chopped

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
Mix Wet Ingredients
  1. In another bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Add the egg, vanilla extract, and bourbon, mixing until well combined.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  2. Fold in the chocolate chunks and chopped bacon using a spatula.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
Cool and Serve
  1. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
