Ingredients
  

Chicken and Vegetables
  • 1 lb boneless, skinless chicken breast sliced into thin strips
  • 4 cups bok choy washed and chopped
  • 1 cup bell pepper sliced
  • 1 cup carrot sliced
  • 2 cloves garlic minced
Sauce
  • 3 tbsp soy sauce low sodium preferred
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp rice vinegar

Method
 

Prepare the Chicken
  1. In a bowl, combine sliced chicken with soy sauce and sesame oil. Let marinate for 10 minutes.
  2. While the chicken is marinating, prepare the vegetables.
Cook the Chicken
  1. Heat a wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until cooked through.
Add Vegetables
  1. Add garlic, bok choy, bell pepper, and carrot to the wok. Stir-fry for another 5 minutes until vegetables are tender-crisp.
Thicken the Sauce
  1. Stir in the cornstarch mixture and cook for an additional 2 minutes until the sauce thickens.
Serve
  1. Remove from heat and serve hot over rice or noodles.

Notes
