Ingredients
  

Base Ingredients
  • 1 cup rolled oats preferably gluten-free
  • 1/2 cup almond flour
  • 1/2 cup vanilla protein powder whey or plant-based
  • 1/4 cup maple syrup or honey
  • 1/4 cup cream cheese softened
  • 1/2 cup blueberries fresh or frozen
Coating Ingredients
  • 1/4 cup coconut flakes unsweetened
  • 2 tablespoons chia seeds

Method
 

Prepare the Mixture
  1. In a mixing bowl, combine rolled oats, almond flour, protein powder, maple syrup, and cream cheese.
  2. Mix until well combined and a dough-like consistency forms.
  3. Gently fold in the blueberries.
Form the Bites
  1. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  2. Place the balls on a baking sheet lined with parchment paper.
Coat the Bites
  1. Roll each ball in coconut flakes and chia seeds until fully coated.
Chill and Serve
  1. Refrigerate the protein bites for at least 30 minutes to firm up.
  2. Serve chilled and enjoy as a healthy snack!
