Ingredients
  

Salad Base
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bacon cooked and crumbled
Chicken
  • 2 cups cooked chicken breast shredded or diced
Dressing
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Ingredients
  1. Cook the bacon in a skillet until crispy, then crumble it.
  2. Grill or pan-cook the chicken breast until fully cooked, then shred or dice it.
Make the Dressing
  1. In a small bowl, mix together mayonnaise, lemon juice, Dijon mustard, salt, and pepper until smooth.
Assemble the Salad
  1. In a large mixing bowl, combine the romaine lettuce, cherry tomatoes, cucumber, cooked chicken, and crumbled bacon.
  2. Drizzle the dressing over the salad and toss gently to combine.
Serve
  1. Divide the salad into serving bowls and enjoy immediately.
