- Preheat your Blackstone griddle to medium-high heat and drizzle some extra virgin olive oil over the surface.
- Pat your chicken breasts dry with paper towels and season both sides with salt, pepper, and dried Italian herbs.
- Place the seasoned chicken breasts on the preheated griddle and sear for about 5–7 minutes on each side until golden brown and cooked through.
- Lower the heat slightly and add minced garlic around the chicken, sautéing for about 1–2 minutes until fragrant.
- Sprinkle grated Parmesan over each piece of chicken and cover for about 2–3 minutes until melted.
- Remove from heat and let rest for a couple of minutes before serving. Garnish with fresh parsley if desired.
