Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts about 6 ounces each
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 2 tablespoons olive oil for cooking
Pasta
  • 12 ounces fettuccine or pasta of choice
Alfredo Sauce
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese plus extra for serving
  • 2 cloves garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste
  • 1/4 teaspoon nutmeg optional
Garnish
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Cook the Chicken
  1. Season the chicken breasts with Cajun seasoning on both sides.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until cooked through and blackened. Remove from skillet and let rest.
Prepare the Pasta
  1. In a pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente.
  2. Drain the pasta and set aside, reserving a little pasta water.
Make the Alfredo Sauce
  1. In the same skillet used for the chicken, add minced garlic and sauté for about 30 seconds until fragrant.
  2. Pour in the heavy cream and bring to a gentle simmer.
  3. Stir in the Parmesan cheese, salt, pepper, and nutmeg (if using), whisking until smooth and creamy.
Combine and Serve
  1. Slice the blackened chicken into strips.
  2. Add the cooked fettuccine to the Alfredo sauce, tossing to coat. If the sauce is too thick, add a little reserved pasta water.
  3. Top with sliced chicken and garnish with chopped parsley. Serve immediately.

Notes

For extra heat, add more Cajun seasoning or a pinch of cayenne pepper to the Alfredo sauce.
