Prepare the Filling
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add mushrooms and cook until softened. Stir in spinach and cook until wilted. Season with cumin, salt, and pepper.
Assemble Quesadillas
- Preheat the oven to 400°F (200°C). On one half of each tortilla, layer the spinach mixture and sprinkle with mozzarella and cheddar cheese.
- Fold the tortillas over to create a half-moon shape. Place on a baking sheet.
Bake
- Bake in the preheated oven for 15-20 minutes, or until the tortillas are golden and crispy.
- Remove from the oven and let cool for a few minutes before slicing into wedges.
