Ingredients
  

Fritter Mixture
  • 1 cup canned pumpkin puree or fresh pumpkin, cooked and mashed
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/4 cup milk or dairy-free alternative
Topping
  • 2 tablespoons powdered sugar for dusting
  • 1 teaspoon cinnamon sugar optional

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the pumpkin puree, egg, and milk, and mix until smooth.
Mix Dry Ingredients
  1. In another bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and sugar.
Combine Mixtures
  1. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Form and Bake Fritters
  1. Using a spoon, drop small amounts of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 20-25 minutes, or until golden brown and firm to the touch.
Serve
  1. Remove from the oven and let cool slightly. Dust with powdered sugar and cinnamon sugar before serving.
