Method
Prepare the Potatoes
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until the potatoes are well coated.
Bake the Potatoes
- Spread the potatoes evenly in a baking dish and bake for 25 minutes.
Add Feta and Lemon
- After 25 minutes, remove the baking dish from the oven and add the crumbled feta cheese and lemon juice and zest on top of the potatoes.
Finish Baking
- Return the dish to the oven and bake for an additional 20 minutes, or until the potatoes are tender and the feta is golden.
Serve
- Remove from the oven, let it cool slightly, and serve warm, garnished with fresh herbs if desired.
