Baked Feta Potatoes with Lemon

Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes peeled and cut into cubes
Feta Cheese
  • 8 ounces feta cheese crumbled or block
Lemon
  • 1 whole lemon juiced and zested
Olive Oil
  • 3 tablespoons extra virgin olive oil
Garlic
  • 4 cloves garlic minced
Herbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
Salt and Pepper
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, oregano, thyme, salt, and pepper. Toss until the potatoes are well coated.
Bake the Potatoes
  1. Spread the potatoes evenly in a baking dish and bake for 25 minutes.
Add Feta and Lemon
  1. After 25 minutes, remove the baking dish from the oven and add the crumbled feta cheese and lemon juice and zest on top of the potatoes.
Finish Baking
  1. Return the dish to the oven and bake for an additional 20 minutes, or until the potatoes are tender and the feta is golden.
Serve
  1. Remove from the oven, let it cool slightly, and serve warm, garnished with fresh herbs if desired.

Notes
