Ingredients
  

Chicken
  • 4 pieces chicken legs skin-on, bone-in
Rice
  • 1 cup long-grain rice uncooked
Seasonings
  • 2 tablespoons olive oil for coating chicken
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 cups chicken broth for cooking rice
Vegetables
  • 1 cup frozen peas optional
  • 1 medium onion chopped

Method
 

Prepare Chicken
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, and paprika.
  3. Coat the chicken legs with the seasoning mixture and place them in a baking dish.
Prepare Rice
  1. In a saucepan, sauté the chopped onion in a little olive oil until translucent.
  2. Add the rice and stir for 1-2 minutes until slightly toasted.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
Bake Chicken
  1. Place the baking dish with chicken in the preheated oven.
  2. Bake for 35-40 minutes or until the chicken is cooked through and juices run clear.
Combine and Serve
  1. Once the chicken is done, fluff the rice with a fork and stir in the peas if using.
  2. Serve the baked chicken legs over the rice and enjoy!
