Method
Prepare the Filling
- In a skillet, heat olive oil over medium heat. Add shredded chicken, black beans, corn, and taco seasoning. Stir until heated through.
- Remove from heat and stir in half of the cheddar cheese.
Assemble the Chimichangas
- Preheat the oven to 400°F (200°C).
- Lay a tortilla flat and spoon about 1/2 cup of the chicken filling onto the center.
- Fold in the sides and roll up tightly. Place seam side down on a baking sheet.
- Repeat with remaining tortillas and filling.
Bake
- Sprinkle the remaining cheddar cheese on top of the chimichangas.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
Serve
- Remove from oven and let cool slightly before serving.
- Serve with sour cream, salsa, and guacamole on the side.
