Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
Wet Ingredients
  • 1 large egg beaten
  • 1/2 cup milk can use almond or oat milk
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
Filling
  • 2 medium apples peeled, cored, and diced
  • 1 tbsp lemon juice
Topping
  • 1 tbsp cinnamon sugar optional

Method
 

Prepare the Oven and Baking Sheet
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Mix Dry Ingredients
  1. In a mixing bowl, combine the flour, baking powder, cinnamon, nutmeg, and salt.
Combine Wet Ingredients
  1. In another bowl, whisk together the egg, milk, honey, and vanilla extract.
Combine Mixtures
  1. Pour the wet ingredients into the dry ingredients and mix until just combined.
Add Apples
  1. Fold in the diced apples and lemon juice until evenly distributed.
Shape and Bake
  1. Scoop spoonfuls of the batter onto the prepared baking sheet, shaping them into fritters. Sprinkle with cinnamon sugar if desired.
  2. Bake for 20-25 minutes or until golden brown.
Cool and Serve
  1. Allow the fritters to cool for a few minutes before serving. Enjoy warm!
