Bacon Fig Gorgonzola Pizza

A delightful combination of crispy bacon, rich gorgonzola, and sweet fig spread on mini Naan bread.

Ingredients
  

  • 4 mini Naan bread or 2 regular sized Naan
  • 4 slices thick-cut bacon
  • 1/4 cup yellow onion sliced
  • 2 Tablespoons fig spread
  • 2 ounces crumbled gorgonzola cheese
  • 1/4 cup baby spinach shredded

Method
 

  1. Preheat your oven to 400 degrees.
  2. In a large skillet over medium heat, cook the thick-cut bacon until it reaches your desired level of doneness. Remove and drain on paper towels, then cut into bite-sized pieces.
  3. In the same skillet with reserved bacon fat, add sliced onions and sprinkle with salt. Cook over medium-low heat for about 15 minutes until golden brown.
  4. Lay out Naan bread and top each with crumbled gorgonzola cheese. Warm fig spread in the microwave for 15-20 seconds, then spread over cheese. Top with chopped bacon and sautéed onions.
  5. Bake in the preheated oven for about 8 minutes. Add fresh spinach on top and bake for an additional 5-7 minutes until hot and bubbly.
  6. Remove from oven, let cool slightly, and enjoy!
