Ingredients
  

Soup Base
  • 4 slices bacon chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Gnocchi and Cheese
  • 1 pound gnocchi store-bought or homemade
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup parmesan cheese grated
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Cook the Bacon
  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté for 5 minutes until translucent.
Build the Soup
  1. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer.
  3. Add the heavy cream, dried thyme, salt, and black pepper. Stir to combine.
Add Gnocchi and Cheese
  1. Add the gnocchi to the pot and cook for 3-5 minutes until they float to the surface.
  2. Stir in the sharp cheddar and parmesan cheeses until melted and smooth.
Serve
  1. Ladle the soup into bowls and top with crispy bacon and chopped parsley.
  2. Serve hot and enjoy!

Notes

For a thicker soup, you can blend a portion of the soup and return it to the pot before adding the gnocchi.
