Method
Cook the Bacon
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.
- Add the diced onion to the pot and sauté for 5 minutes until translucent.
Build the Soup
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the heavy cream, dried thyme, salt, and black pepper. Stir to combine.
Add Gnocchi and Cheese
- Add the gnocchi to the pot and cook for 3-5 minutes until they float to the surface.
- Stir in the sharp cheddar and parmesan cheeses until melted and smooth.
Serve
- Ladle the soup into bowls and top with crispy bacon and chopped parsley.
- Serve hot and enjoy!

For a thicker soup, you can blend a portion of the soup and return it to the pot before adding the gnocchi.
