Flatbread Base
  • 4 pieces flatbread store-bought or homemade
Chicken Topping
  • 2 cups grilled chicken breast sliced
Avocado Topping
  • 2 medium ripe avocados sliced
Cheese
  • 1 cup shredded mozzarella cheese
Lime Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Garnish
  • 1 tablespoon fresh cilantro chopped

Method
 

Prepare the Chicken
  1. Grill the chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Let rest and slice.
Make the Lime Dressing
  1. In a mixing bowl, whisk together olive oil, lime juice, honey, salt, and black pepper until well combined.
Assemble the Flatbread Pizzas
  1. Preheat the oven to 400°F (200°C). Place flatbreads on a baking sheet.
  2. Spread the grilled chicken evenly over each flatbread.
  3. Top with sliced avocados and shredded mozzarella cheese.
Bake the Flatbreads
  1. Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
Serve
  1. Drizzle the lime dressing over the baked flatbreads and garnish with chopped cilantro before serving.
