Ingredients
  

Chicken and Gnocchi
  • 1 lb Boneless, Skinless Chicken Breasts Cut into bite-sized pieces
  • 1 lb Gnocchi Store-bought or homemade
  • 1 tbsp Olive Oil For cooking chicken
  • 1 tsp Salt To taste
  • 1 tsp Black Pepper To taste
Creamy Sauce
  • 2 cups Heavy Cream
  • 1 cup Asiago Cheese Grated
  • 2 cloves Garlic Minced
  • 1 tsp Dried Italian Herbs Such as oregano or basil
  • 1/2 cup Parmesan Cheese Grated for garnish
Vegetables
  • 1 cup Spinach Fresh
  • 1 cup Cherry Tomatoes Halved

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 7-10 minutes.
  2. Remove chicken from the skillet and set aside.
Prepare the Gnocchi
  1. In a pot of boiling salted water, cook gnocchi according to package instructions until they float to the top. Drain and set aside.
Make the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  2. Pour in heavy cream and bring to a simmer. Stir in Asiago cheese and dried herbs, cooking until the cheese is melted and the sauce is creamy.
Combine Everything
  1. Add the cooked chicken, gnocchi, spinach, and cherry tomatoes to the skillet. Toss to coat everything in the sauce and cook for an additional 2-3 minutes until heated through.
  2. Serve hot, garnished with grated Parmesan cheese.
