Method
Cook the Chicken
- In a large skillet, heat olive oil over medium heat. Add chicken pieces, season with salt and pepper, and cook until golden brown and cooked through, about 7-10 minutes.
- Remove chicken from the skillet and set aside.
Prepare the Gnocchi
- In a pot of boiling salted water, cook gnocchi according to package instructions until they float to the top. Drain and set aside.
Make the Sauce
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Asiago cheese and dried herbs, cooking until the cheese is melted and the sauce is creamy.
Combine Everything
- Add the cooked chicken, gnocchi, spinach, and cherry tomatoes to the skillet. Toss to coat everything in the sauce and cook for an additional 2-3 minutes until heated through.
- Serve hot, garnished with grated Parmesan cheese.
