Ingredients
  

  • 4 cups baby arugula about 6 ounces
  • 1/4 cup Parmesan cheese shaved
  • 1 tablespoon lemon juice freshly squeezed
  • 3 tablespoons extra virgin olive oil
  • 1/8 teaspoon salt or more to taste
  • 1/8 teaspoon ground black pepper or more to taste

Method
 

  1. In a small mixing bowl, combine the freshly squeezed lemon juice, extra virgin olive oil, salt, and pepper. Stir well to mix.
  2. In a large serving bowl, add the baby arugula along with the dressing. Toss well to ensure that all the leaves are evenly coated.
  3. Sprinkle shaved Parmesan cheese generously on top before serving immediately.
