Ingredients
  

Gnocchi
  • 1 pound gnocchi store-bought or homemade
Tomato Sauce
  • 1 can diced tomatoes 14.5 oz
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Toppings
  • 8 ounces burrata cheese torn into pieces
  • 1/4 cup fresh basil for garnish

Method
 

Cook Gnocchi
  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, about 2-3 minutes.
  2. Drain the gnocchi in a colander and set aside.
Make Creamy Tomato Sauce
  1. In a large skillet, combine the diced tomatoes, heavy cream, dried basil, garlic powder, salt, and black pepper. Cook over medium heat until heated through, about 5 minutes.
  2. Add the cooked gnocchi to the skillet and gently stir to combine, cooking for an additional 2-3 minutes until the gnocchi is warmed through.
Serve
  1. Divide the creamy tomato gnocchi among serving plates. Top with torn burrata cheese and fresh basil. Serve immediately.
