Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar (for cheesecake filling)
  • 1 large egg (for cheesecake filling)
  • 1 teaspoon vanilla extract (for cheesecake filling)
  • 1 cup white chocolate chips
  • 1 cup chopped peanut butter cups

Instructions

  1. Prepare the cookie dough by creaming together softened butter and sugars until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  2. In a separate bowl, combine flour, baking soda, and salt; gradually mix into the wet ingredients. Chill the dough for about an hour.
  3. While the dough chills, prepare the cheesecake filling by beating softened cream cheese with sugar, one egg, and vanilla extract until smooth.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop chilled dough into disks, fill with cheesecake mixture, seal edges, and roll into balls before placing on the baking sheet.
  6. Bake for 10-12 minutes or until golden around the edges; cool on wire racks.
  7. Drizzle melted white chocolate over cooled cookies and sprinkle with chopped peanut butter cups.
