  • 2 cups vegan chick’n pieces
  • 2 medium carrots
  • ½ cup celery
  • ½ onion
  • 1 teaspoon garlic
  • 6 tablespoons vegan butter
  • ⅓ cup all-purpose flour
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1½ cups vegetable broth
  • 1 cup frozen peas
  • ⅔ cup vegan heavy cream
  • 23 cups vegan stuffing

Instructions

  1. Prepare the pie crust: If using store-bought, thaw it; if homemade, ensure it's chilled.
  2. Make the stuffing according to your recipe or use a pre-made version; let cool.
  3. Cook the chick’n pieces until golden brown using air frying or pan-frying.
  4. In a large skillet, melt vegan butter over medium heat; add chopped onion, garlic, carrots, and celery. Sauté until tender.
  5. Stir in flour, salt, pepper, thyme; gradually whisk in vegetable broth and cream until thickened.
  6. Add cooked chick’n and peas; mix well.
  7. Pour filling into the pie crust, top with prepared stuffing.
