  • 34 tbsp agave syrup (or maple syrup/powdered sugar)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 100 grams 70% dark chocolate (chips or chopped)
  • 400g tin full-fat coconut milk

Instructions

  1. Blend the silken tofu, peanut butter, agave syrup, vanilla extract, and salt in a blender until smooth and creamy.
  2. Spoon the mixture into ramekins or jars and chill in the refrigerator.
  3. Melt dark chocolate using a microwave or double boiler; stir in the creamy part of coconut milk until well combined.
  4. Pour the ganache over the chilled mousse and let set in the fridge for about an hour before serving.
