  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean, split and seeds scraped
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press about 1 tablespoon into each cupcake liner.
  3. Beat cream cheese and remaining sugar until smooth. Add eggs one at a time, then stir in sour cream, heavy cream, vanilla bean seeds, and vanilla extract.
  4. Fill each liner with cheesecake batter about 3/4 full and bake for 20-25 minutes until set but slightly jiggly.
  5. Cool at room temperature before refrigerating for at least 2 hours.
  6. Before serving, sprinkle sugar on top of each cupcake and caramelize using a kitchen torch.
