  • 3 cans cannellini beans (drained and rinsed)
  • 1 yellow onion (finely chopped)
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 large carrots (peeled and chopped)
  • 1 stalk celery (diced)
  • 1/3 cup white grape juice
  • 2 cups chopped kale (stems removed)
  • 2 1/24 cups vegetable broth
  • Tomato paste and seasonings

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until golden.
  2. Add garlic, celery, and carrots; sauté for about 10 minutes.
  3. Pour in white grape juice; cook until most liquid evaporates.
  4. Stir in remaining ingredients except kale. Bring to a boil, then simmer for 15 minutes.
  5. Blend part of the soup until smooth, then return to pot and mix in chopped kale.
  6. Simmer for another few minutes until kale is wilted.
  7. Taste and adjust seasoning before serving.
