  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 50ml single cream
  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. In a large pot, heat olive oil and butter over low heat. Sauté chopped onion and sweet potato for 5–10 minutes until softened.
  2. Stir in minced garlic and ground cinnamon; cook for another minute until fragrant.
  3. Add fresh basil, canned tomatoes, and chicken stock to the pot. Bring to a boil, then reduce heat and simmer covered for 20 minutes.
  4. While the soup simmers, combine all dumpling ingredients in a bowl to form a stiff mixture; shape into 8 balls.
  5. Blend the soup until smooth; season with sugar, salt, pepper, and stir in cream.
  6. Drop dumplings into the soup and cook for an additional 10 minutes without stirring.
