  • 500 g butternut squash (peeled and chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan cheese
  • Juice of 1 lemon
  • 50 g turkey strips (chopped)
  • 1 ball fresh mozzarella (torn into pieces)

Instructions

  1. Preheat your oven to 180ºC.
  2. Combine butternut squash, onion, and garlic on a baking tray. Drizzle with olive oil and roast for about 30 minutes until tender.
  3. Blend the roasted mixture until smooth; add a splash of water if needed.
  4. In a pan, heat olive oil over medium heat and cook turkey strips until crispy.
  5. Stir in the purée with milk and water; add gnocchi and simmer for about 8-10 minutes until tender.
  6. Mix in parmesan cheese and lemon juice; season as desired.
  7. Top with mozzarella pieces and grill until melted (about 5 minutes).
  8. Garnish with remaining turkey strips, walnuts, and cracked black pepper before serving.
