  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 1 medium white onion (chopped)
  • 3 jalapeño peppers (chopped)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2 tablespoons olive oil
  • 2 tablespoons masa harina

Instructions

  1. Lightly toast the dried peppers in a dry pan for 1-2 minutes per side and then soak them in hot water for about 20 minutes.
  2. Blend the softened peppers with some soaking water until smooth.
  3. Toss cubed beef with cumin, salt, and pepper. Sear in olive oil until browned.
  4. Sauté onions, jalapeños, and garlic in the same pot until tender.
  5. Add the blended pepper paste to the pot along with beef stock and water. Bring to a boil.
  6. Simmer for about two hours until the beef is tender, stirring occasionally.
