  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1 cup unsalted butter (cold)
  • 1/4 cup ice water
  • 1 lb sweet potatoes
  • 5 tablespoons unsalted butter (softened)
  • 1 cup dark brown sugar
  • 3 large eggs
  • 1 teaspoon cinnamon
  • 1 cup evaporated milk

Instructions

  1. Prepare the crust by mixing flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Chill for at least 30 minutes.
  2. Cook peeled and chopped sweet potatoes in salted water until tender (15–20 minutes). Drain and mash until smooth.
  3. In another bowl, mix together mashed sweet potatoes, softened butter, dark brown sugar, eggs, spices, salt, evaporated milk until smooth.
  4. Preheat oven to 350°F (175°C). Roll out chilled dough and fit into a pie dish. Pour sweet potato filling in evenly.
  5. Brush edges with an egg wash and bake for about 90 minutes until set in the middle. Allow cooling before serving.
