  • 5 pounds sweet potatoes
  • 1 cup water
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup melted butter
  • 1 cup brown sugar
  • ½ cup heavy cream or milk
  • ½ cup flour
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Cook sweet potatoes in water until fork-tender (about 15-20 minutes). Drain and mash until smooth.
  2. Preheat oven to 375°F (190°C). Mix mashed sweet potatoes with eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream until well combined.
  3. In a separate bowl, mix brown sugar, flour, melted butter, and chopped pecans for the topping. Sprinkle over the sweet potato mixture.
  4. Bake uncovered for 20-25 minutes until golden brown. Add vegan marshmallows on top and bake for an additional 5-7 minutes until puffy.
