  • 1 whole turkey (fresh and all-natural)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 whole lemon, zested
  • 4 cloves minced garlic
  • 3 teaspoons sea salt

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Add 2 cups of water to the bottom of your roasting pan for moisture.
  3. Mix melted butter with grape juice and chicken stock; set aside.
  4. Combine softened butter, chopped herbs, lemon zest, garlic, and salt to create the herb butter rub.
  5. Rub two-thirds of the herb mixture under the turkey skin and spread the rest on top.
  6. Optionally stuff the turkey with aromatics before tying its legs together.
  7. Dip cheesecloth in the grape juice mixture and drape over the turkey.
  8. Roast in the oven, basting every 20-30 minutes until thigh registers between 180-185°F (82-85°C).
  9. Remove cheesecloth for the last 30-45 minutes for golden skin.
  10. Let rest for 15 minutes before carving.
