  • 2.53 lbs boneless beef chuck roast
  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 2 large carrots, finely chopped
  • 2 stalks celery, finely chopped
  • 46 cloves garlic, minced
  • 1/4 cup tomato paste
  • 1 cup apple cider vinegar
  • 1 can crushed tomatoes (28 oz)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup low-sodium beef broth
  • Dried herbs (oregano, thyme, rosemary)
  • Salt and black pepper to taste

Instructions

  1. Pat the beef dry and season with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear beef cubes until browned on all sides. Remove from heat.
  3. In the same skillet, sauté onion, carrots, celery, and garlic until softened.
  4. Stir in tomato paste and cook briefly before deglazing with apple cider vinegar.
  5. Transfer sautéed vegetables to a slow cooker; add seared beef cubes along with crushed tomatoes, diced tomatoes, broth, bay leaves, and herbs.
  6. Cover and cook on LOW for 6-8 hours or HIGH for about 3-4 hours until beef is tender.
  7. Shred the beef in the sauce before serving over your choice of cooked pasta.
