  • 1 cup bread crumbs
  • 1/2 cup onion
  • 1/2 cup celery
  • 1/2 cup carrots
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup chicken broth
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse and pat dry the Cornish game hens, then season inside and out with salt, pepper, garlic powder, dried thyme, and paprika.
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add celery and carrots; cook until softened. Stir in bread crumbs, optional raisins, nuts, parsley, chicken broth, and melted butter until well combined.
  3. Stuff each hen's cavity with the prepared stuffing without overstuffing. Tie legs together if desired and place hens in a roasting pan. Drizzle with white grape juice or apple juice for basting.
  4. Roast in the preheated oven for about 1 hour and 10 minutes, basting halfway through cooking. Ensure internal temperature reaches 165°F (75°C).
