  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Optional: raisins or dried cranberries, chopped nuts
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice

Instructions

  1. Preheat oven to 375°F (190°C). Rinse and pat dry the Cornish game hens.
  2. Mix olive oil, salt, pepper, garlic powder, thyme, and paprika. Rub over the hens inside and out.
  3. In a bowl, combine bread crumbs, onion, celery, carrots, optional fruits/nuts, parsley, chicken broth, and melted butter.
  4. Stuff each hen loosely with the mixture. Place any leftover stuffing in a baking dish.
  5. Place hens in a roasting pan; pour white grape juice or apple juice over them. Roast for about 1 hour and 10 minutes until cooked through (internal temperature of 165°F or 74°C).
  6. Let rest for 10 minutes before serving.
