  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste
  • 4 slices cooked turkey bacon
  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • For the chipotle mayo: ¼ cup mayonnaise, 1 tbsp adobo sauce, ½ tsp lime juice

Instructions

  1. Prep chicken by pounding to an even thickness and seasoning with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Grill chicken over medium-high heat for about 4–5 minutes per side until cooked through (165°F internal temp). Add cheese during the last minute to melt.
  3. Mix mayonnaise with adobo sauce and lime juice to create chipotle mayo.
  4. Toast brioche buns until golden brown.
  5. Assemble the sandwich by spreading chipotle mayo on both bun sides and layering with avocado, grilled chicken with melted cheese, turkey bacon, and jalapeños.
