  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Peel and cube the sweet potatoes, then toss them in olive oil, cinnamon, and nutmeg.
  2. Boil the sweet potatoes in water for 15-20 minutes until tender; drain.
  3. Mash the sweet potatoes with almond milk and vanilla extract until smooth.
  4. Stir in butter, brown sugar, and maple syrup; mix well.
  5. In another bowl, combine raisins, marshmallows, pecans, cinnamon, nutmeg, allspice, and maple syrup for the topping.
  6. Spread the sweet potato mixture in a baking dish, top with the mixture from step 5.
  7. Bake at 350°F (175°C) for about 45 minutes until bubbly and golden.
