  • 23 tablespoons extra virgin olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup almond milk
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter, cubed
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon (for topping)
  • 1/8 teaspoon ground nutmeg (for topping)
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Peel and cube the sweet potatoes and toss them with olive oil, cinnamon, and nutmeg.
  2. Roast the seasoned sweet potatoes on a baking sheet for 25-30 minutes until tender.
  3. In a mixing bowl, combine roasted sweet potatoes with almond milk, vanilla extract, butter, brown sugar, and maple syrup; mash until smooth.
  4. Layer half of the sweet potato mixture in a greased baking dish. Top with half of the soaked raisins and vegan marshmallows. Repeat layers.
  5. Drizzle additional maple syrup on top and bake for another 30-35 minutes until golden brown.
  6. Let cool for 10 minutes before serving.
