  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 generous tablespoons pesto
  • Butter, as required

Instructions

  1. Assemble all ingredients before starting.
  2. Butter one side of each slice of sourdough bread.
  3. On the unbuttered side of four slices, spread about one tablespoon of pesto, layer with mozzarella and sun-dried tomatoes, then top with another slice of sourdough (buttered side out).
  4. Heat a skillet over medium heat and grill sandwiches until golden brown on both sides and cheese is melted, about 3-4 minutes per side.
  5. Remove from heat, cool slightly, slice, and serve warm.
