  • 2/3 cup pumpkin puree

  • 1/2 cup sugar (for rolling)

Instructions

  2. Cream room temperature butter until smooth; mix in brown sugar, molasses, and pumpkin puree.
  3. Beat in the egg until well combined.

  5. Chill dough for at least 30 minutes to firm up.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
