1 pound large shrimp, peeled and deveined
2 ripe avocados, diced
2 ripe mangoes, diced
¼ red onion, finely diced
¼ cup fresh cilantro, chopped
Juice of 2–3 limes
2–3 cups cooked rice or quinoa
2 tablespoons olive oil for cooking
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon garlic powder
Salt and black pepper to taste
Instructions
Prepare all ingredients by washing and dicing the produce.
In a skillet over medium-high heat, add olive oil. Sauté shrimp seasoned with chili powder, cumin, garlic powder, salt & pepper until pink (about 2-3 minutes per side).
In bowls, layer cooked rice or quinoa as the base, followed by diced avocados and mangoes.
Top with sautéed shrimp and sprinkle with red onion and cilantro.
