  • 3 pounds small red potatoes or fingerlings, scrubbed and quartered
  • 3/4 cup sour cream or Greek yogurt
  • 3 tablespoons white vinegar
  • 1 teaspoon sugar
  • 1/2 cup fresh dill, chopped
  • 1/4 cup fresh chives or green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and white pepper to taste
  • Fresh dill sprigs for garnish

Instructions

  1. Cook the Potatoes: In a large pot of salted boiling water, add quartered potatoes and cook until fork-tender (15-20 minutes). Drain well.
  2. Prepare the Dressing: In a large bowl, whisk together sour cream, white vinegar, sugar, salt, and white pepper until smooth.
  3. Combine Potatoes and Dressing: Add warm potatoes to the dressing and gently mix to coat.
  4. Add Fresh Herbs: Fold in dill, chives, parsley, and optional red onion.
  5. Chill: Cover and refrigerate for at least one hour (preferably 2-3 hours) for best flavor.
