  • 2 acorn squash
  • ½ pound ground turkey sausage
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat oven to 400°F. Cut each acorn squash in half lengthwise and scoop out seeds.
  2. Place squash halves cut-side down on a lined baking sheet and bake for about 20 minutes until fork-tender.
  3. In a skillet, sauté ground turkey sausage over medium heat until browned; set aside.
  4. In the same skillet, heat olive oil and sauté onions until softened. Add kale, garlic, celery, apple, thyme, sage, and rosemary; cook until fragrant.
  5. Mix in cooked sausage and adjust seasoning.
  6. Scoop some flesh from baked squash and mix it into the filling.
  7. Fill each squash half with stuffing and return to oven for another 15 minutes.
  8. Top with feta cheese and nuts; bake an additional 5 minutes before serving.
