  • 4 cups chopped baby gold potatoes
  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. In a large pot over medium-high heat, brown the Italian sausage for about one minute. Crumble as it cooks until fully browned; transfer to a paper towel-lined plate to drain.
  2. In the same pot, melt one tablespoon of butter and sauté mirepoix for 5-7 minutes until tender. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in the chopped baby potatoes along with parsley, basil, salt, and pepper. Pour in chicken stock; bring to a boil. Reduce heat to medium-low and simmer for 15-20 minutes until potatoes are fork-tender.
  4. In a separate pot, melt four tablespoons of butter over medium heat; whisk in flour for one minute. Gradually add milk while whisking until thickened. Stir in heavy cream before removing from heat.
  5. Combine the cream mixture with the soup pot off the heat. Gradually stir in shredded cheese until melted, then return the sausage to the pot and season as needed.
  6. Serve warm with optional garnishes like fresh herbs or extra cheese.
