  • 2 cups (about 20) pitted medjool dates
  • 1 cup unsweetened shredded coconut (divided)
  • 2 tablespoons chocolate chips or dark chocolate pieces (divided)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon almond butter (optional)

Instructions

  1. Preheat your oven to 400°F. Spread shredded coconut on a baking sheet and toast for 5-10 minutes until golden brown.
  2. In a food processor, combine pitted medjool dates, almond butter (if using), 2/3 cup toasted coconut, 1 tablespoon chocolate chips, sea salt, and vanilla extract. Process until it forms a sticky dough.
  3. Using clean hands or a cookie scoop, roll the dough into approximately 16 bite-sized balls. Incorporate the remaining chocolate chips into each ball.
  4. Roll each ball in the remaining toasted coconut until well-coated.
  5. Store energy balls in an airtight container in the fridge for up to two weeks or freeze for three months.
